Simple Suppers – Chicken (no noodle) Soup
By dusanabotswana On December 16th, 2012I know I’ve told you my love of simple, quick cooking on here before, but I’ll say it again – I love it! Jonny and I try to save money by bringing lunches to work/school and eating dinner at home (although sadly not usually together, his are more like midnight snacks because he stays at school studying so late). I actually don’t like cooking, but what I really don’t like even more is eating lots of processed food, so I have a few tricks up my sleeve, that all just involve leftovers.
So, here’s a soup I love this time of year; it’s super easy (I never use a recipe), and it’s all from scratch (so no weird ingredients from cans/boxes and less waste that way : ).

Ingredients:
-1 package chicken (some sort w/ bones, we use organic drumsticks because normal is creepy)
-Several potatoes (I don’t eat gluten so no noodles here, but I prefer potatoes anyway)
-Carrots & onions (any other veggies you like later to put in later)
-Spices to taste ( I used salt, pepper, garlic powder, cilantro, and a dash of cayenne powder)
Instructions:
Fill up a big pot of water, put the chicken in and the lid on to get it boiling while you wash and chop the veggies. Throw in veggies + spices and leave for maybe half an hour or until the chicken is cooked. Then, when everything’s cooked, throw in just the amount of veggies you want to eat this meal and put the lid back on for a couple minutes to steam. (Or for spinach just put directly into the soup, like shown so it’s not too mushy.)
I love soup when the weather cools down and can happily eat the same one all week, so the next evening I just warm up another portion, throw in another portion of fresh veggies, and sometimes top it off with a bit of cheese or a dash of hot sauce for a different taste. This sounds yummy! I’d have to leave out the chicken but the potatoes sounds so good. I don’t like cooking much either but soup is the best in the cold weather.

I’m all about soup this time of year too and I never use measurements when I make it…hehe. I love the idea of potatoes in the chicken soup instead of noodles. This I will be trying :)

Good healthy recipe. My favorite is old family ‘goulash’ of hamburger, potatoes, carrots, celery, beans-any kind, tomatoes or paste, onions, garlic salt, pepper, chili powder, oregano & anything else. hmmm
